REVIVE SALAD

Our Sweet Harvest gives you your daily servings of greens with a phytonutrient boost that is sweet and smooth. It rejuvenates and satisfies your body, mind and taste buds. Looking at the delicious combination of fruits and veggies we realized they would make one heck of a salad, introducing the Revive Salad.

You will need:

  • 1 head of romaine
  • 1 fennel bulb, roasted
  • 1 green apple
  • 1 pear
  • 1 cucumber
  • 1 cup of quinoa, cooked
  • 1/2 cup of almonds

Lemon Parsley Dressing

  • 1 cup of fresh lemon juice
  • 1/2 teaspoon sea salt
  • 6 tablespoons olive oil
  • 1 clove of garlic
  • 1 tablespoon of fresh parsley, diced

Instructions:

1. Chop fennel, sprinkle with olive oil and roast in oven at 350 degrees for about 15 minutes.

2. In meantime, cut up apple, pear and cucumber (thin slices or 1 inch chunks).

3. Toss romaine, apple, pear, cucumber, quinoa and almonds together in a large bowl.

4. Whisk together all dressing ingredients. Toss with salad. Enjoy!
