One of our MJF team members recently went to Bali and came back with so much fun, plant-based inspiration! This Tropical Chia Parfait was a big hit with us and we think it will be with you too! Chia pudding, mango and berry compote are layered to create a fun breakfast, a nutritious snack, or a refreshing dessert as the weather warms. It’s healthy, filling and an excellent source of protein. And the best part is how easy it is to make! Soak chia seeds in Mad Mylk, heat berry compote and dice mangoes. Layer it in a glass and garnish. Boom. Healthy breakfast, snack or dessert!
3 tbsp chia seeds
1 cup Mad Mylk
1 mango, peeled & diced
Mint leaf, for garnish
Triple Berry Jam:
1/2 cup fresh strawberries
1/2 cup fresh raspberries
1/2 cup fresh blackberries
1 tbsp honey
1 tsp vanilla extract
1. Stir the chia seeds into Mad Mylk and refrigerate for at least one hour.
2. While the chia pudding is setting combine berries, honey, and vanilla extract in a small saucepan, and heat over medium high heat. Use a whisk and mash everything up, cook down for 2-3 minutes until just warmed through and a little saucy.
3. In glasses or jars, layer it. We chose berry compote, yogurt mixture, mango, yogurt mixture, then berry compote but it’s up to you. Top with a slice of mango and a mint leaf!
